【濕磨法】
又稱水磨法,將米粒先洗滌後再浸泡,再佐適當水量進行研磨、脫水及乾燥後製得。
研磨時加入適量的水,對米粒及機械之間有潤滑作用,過程可降低米澱粉破損程度,
高度保留米特性及米香味。濕磨法的優點如下:

1. 100%純米製造,無麩質驗證
2. 冷風乾燥,保存時間長
3. 胺基酸含量高(60~65%)
4. 吸油率低(25~30%)
5. 破損澱粉低(3.5~4.5%)
6. 保濕度高(40~43%)
